Fats and Fatty AcidsAlthough there are quite a number of other types of lipids, we will focus our attention on the most common of the lipids: fats, fatty acids and a few closely related compounds. To emphasize the distinction between fats and the fatty acids (into which and from which fats can be made), fats are sometimes called neutral fats. In this section we will look at their structure and properties. The metabolism of fats will also be studied in this lesson, but in its own section.
